This minestrone soup recipe, whilst perfect for babies from 6 months of age, would make a tasty meal for the whole family.
You could puree the soup if necessary, but the vegetables and pasta should be soft enough for baby to manage quite easily. Either cut the vegetables into very small pieces initially, or "squash" with a fork once cooked.
Minestrone Soup Recipe
1 tbsp olive oil 2tbsp peas 1/2 small onion, peeled and finely chopped 1 potato, peeled and diced 1 carrot, peeled and diced 1 stick of celery, chopped 1tbsp fresh parsley, chopped 4oz fresh green beans, chopped 2tsp tomato puree 1/2 leek, chopped 4oz cabbage, shredded 2oz uncooked spaghetti, broken into small pieces 2 pints of water or
chicken stock
Saute the onion and celery in the olive oil for 2 mins, in a large saucepan. Add the carrot, leek and beans and saute for a further 2 mins. Add the cabbage and cook for 5 mins. Cover with water or chicken stock, then add all the remaining ingredients, except for the spaghetti. Bring to the boil, then simmer for about 30 mins, until the vegetables are tender. Finally, add the spaghetti and cook for a few more minutes, until the spaghetti is done.
Serve a bowl to baby and one to yourself, and enjoy a happy meal together!
